Nearly 900 metres up in the Pyrenees, surrounded by forest and mountain air, Hollow Tree is a small mushroom farm built around one simple idea:

Grow exceptional mushrooms, and let the place they come from be part of the story.

We grow seasonal gourmet varieties using water from our own mountain spring, harvesting in small batches for the people who care what ends up on the plate.
